Hi, I'm Sandy! Cooking and sharing with others makes me happy. I sometimes talk too much, make mistakes, laugh at myself, and put my heart into making videos for you to learn from. My Instant Pot recipes and videos are to help those new to the Instant Pot or other electric pressure cookers, or IP users looking for ideas and tips. I had no need of eggs. Just cooked the rice in the IP with the milk, sugar and lemon zest. 10 min. HP and 10 min NR. Then stir in two tbs of lemon juice and a good amount of ricotta cheese. Tadaaaa! Really thick and creamy rice.

I made your chicken thighs and potato recipe tonight...but I added carrots and celery. The gravy came out pretty good. The 8 pieces of chicken were sooooo tender. The family loved this dinner. I'll surely be making more in the future!

I will try it tonight with a few tweaks: will use berbere spice mix, which has what you put plus something else. Will splash some like at the very end. Will cut the spinach cause I hate burning myself with those hot spinach leaves hitting my lips. And will definitely not use the bloppy broth….I’m vegetarian and I literally had a vomit attack when I started hearing and seeing that gel. You should warn viewers before the start of the video 😂

Wouldn’t use a strainer to wash rice, it will never wash thoroughly. Just use a silicone whisk beater and wash it in your pot, rice grain will never fall out anyway.
If you’re going to do cooking videos then I recommend you understand what you’re doing eg the difference between baby back and st Louis ribs. Also, the atmospheric pressure at various altitudes is irrelevant when you’re pressure cooking.
Can I use regular jars (like mermelade ones)?
Excellent recipe. I'm going to adapt it to the slow cooker, since I don't have Instant Pot. As a fellow Washingtonian I love our wines too. I recently discover the Jones Winery. They're based in Quincy but I have found their wine in West Seattle supermarkets.
I don't want it sticky.... Should I put a little olive oil in before cooking???
Use less water and less time
I make mine pretty much the same, except I add two rotisserie chickens minus the breasts; I also add half a cup or so of white wine for acidity. Great stuff!
I wish my wife ,could cook, but she can’t even boil water. I do all the cooking, and try not to waste anything,, she is impossible to cook for. I love different dishes, she loves canned ravioli . Errr

Cliff notes: 1:1 ratio of rice to water. High Pressure cook for 4 mins. Natural release for 10mins.

Funny that there is such a critical difference between 3, 4, and 5 minutes. Then to top it all off you have the peppers and beans that depending on their ripeness can throw another variable into the works. I've learned to shut it down a little early and check on the progress. I would much rather do a restart that than ruin the dish. TheReaper!

where did you get your pans and a stand up trivet. I couldn't find anything at Walmart like that. I just can't afford to order from anywhere. ☹️
I have a very tiny old oven. sometimes the timer doesn't work so I have to watch it if I'm cooking a small pan of biscuits. I can't put a very big pan or skillet in there because it will not fit. I usually use a small round pan or my small square pan. can't put anything very big in the small oven. 😏 Oh well it will be ok 👌

Beautiful! I always made this in a pot on the stove nursing it for four hours. Then I would let it cool on the counter, then I put it in the fridge. I always used it as a filling inside my cupcakes and also in my buttercream frosting. But THIS method takes the cupcakes!! Thank you!
